Mexican Gray Squash
Mexican Gray Squash, also called Middle Eastern or Lebanese, is a summer squash like zucchini but its more stocky and with a rounded bottom. Its pale green skin is smooth and shiny with solid, crisp flesh. Use Mexican Gray Squash squash in the same manner as zucchini. It is perfect for sauté or grilling but you can also slice and layer with other summer vegetables.

Pluots are an inter-specific mix of a plum and apricot and are CCOF-certified organic. Smooth-skinned like a plum with the sweetness of an apricot, this hybrid fruit contains no fat or cholesterol and is high in dietary fiber. More than 20 varieties exist, each with a unique color, shape and flavor. Pluots can be served fresh or cooked and work nicely in most stone fruit recipes.

Organic Red Beets
Red beets are the root of the beet plant and are part of the chard family. They are high in natural sugars which are most noticeable when cooked. When added to a dish they add vibrant color and round out flavors with their sweetness. One way to remove the skin is to boil the beets whole, once cooled, simply rub the skin off or use a pairing knife if it sticks in some places or use a peeler.
