Honeydew
Selecting for ripeness, the ends of the honeydew provide telltale signs of maturity. A fresh and sweet-smelling aroma present at the stem end indicates ripeness; the more aromatic the scent, the sweeter the melon. A gentle probe of the end opposite the stem yields slightly and feel soft and springy when it’s ripe.

Hatch Chilies
Hatch chiles are a broad marketing term for several varieties of New Mexico chiles, including Big Jim, Barker, and R-Naky. They have a similar meaty flesh and mild-medium heat. The Hatch name refers to varieties of species of the genus Capsicum which are grown in the Hatch Valley, an area stretching north and south along the Rio Grande from Arrey, New Mexico, in the north to Tonuco Mountain to the southeast of Hatch, New Mexico.
